About this Recipe
The textbook definition of Southern Comfort Food. This dish is rich, heavy, and will leave you feeling warm and fuzzy with the kick of our THE DISCLAIMER hot sauce.
- 6 tablespoons of unsalted butter
- 12-16 ounces of uncooked breakfast sausage
- 1/3 cup of all purpose flour
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground pepper
- 4 cups of milk (not non-fat)
- 8 eggs
- 1/4 cup of our THE DISCLAIMER hot sauce (plus extra for serving)
- 8 biscuits (homemade or store-bought)
Step 1
In a large frying pan or cast iron skillet over medium-high heat, melt 3 tablespoons of the butter. Add the sausage and cook, breaking it up into smaller pieces with a wooden spoon, until browned. About 5 minutes.
Step 2
reduce the heat to medium. springle the sausage with flour, salt, and pepper. cook, stirring frequently, until the flour smells toasted, around 1 minute or so. gradually stir in the milk, scraping up any browned bits from the bottom of the pan. add the DISCLAIMER hot sauce and bring to a simmer, stirring often, until the mixture has thickened slightly. typically around 1-2 minutes. The gravy will continue to thicken as it sits. Season with additional salt and pepper, as needed, or to your liking. Turn down burner to low and keep warm.Â
Step 3
in a large non-stick frying pan over medium-low heat, melt the remaining 3 tablespoons of butter. crack 4 eggs into the pan, season with salt and pepper, and let cook, undisturbed, until the tops of the eggs are almost completely opaque. Usually around 3-4 minutes. If you’re not into sunny side up, Using a flat spatula, flip the eggs gently, and continue to cook until the egg whites completely set but yolks are still runny. About another minute. Repeat with the reaming 4 eggs.
Step 4
place 4 biscuit halves on each plate and smother with the sausage gravy. Top with your over easy eggs, an extra dash of our THE DISCLAIMER sauce, and serve immediately.Â
